Pasta With Poached Egg, and the Demise of Gourmet

I haven’t had success with making a proper pasta carbonara– I end up scrambling the eggs. This recipe seemed like a good compromise– I do like a good poached egg. This is quick to make, too.

Rolling dough by hand is really hard to get as thin as it needs to be. Use the pasta machine.
Let the dough rest for an hour before working with it.
